#6: Green Soup

This is the first of many blog posts that will start with the word green - Green Soup, Green Eggs, Green Smoothie, Green... Green is my favorite color, I think that food is way more fun when it's green and green usually means kale, collard greens, spinach or other vegetables that are packed with B vitamins like folate, the bio-available form of folic acid. This green soup is thick, nutrient dense and a total favorite in my house. 

INGREDIENTS

6 C Organic Cauliflower (1 medium head)

4 C Organic Kale (1 large bunch)

1 1/2 C Bone Broth or stock, can be homemade or store bought and can be vegetable, turkey or chicken.

1/4 C cold pressed Olive Oil

1/4 tsp Sea Salt

Dash of Black Pepper

Pasture Raised Bacon (optional)

DIRECTIONS

  • Roughly chop cauliflower and kale and place in a shallow pot. Sprinkle with sea salt and freshly ground black pepper.
  • Add broth, cover with a tight fitting lid and cook on medium/high until cauliflower is somewhat tender but is 'al dente' and still has some crunch to it - about 10 minutes
  • Put the cauliflower, kale and bone broth in a high powered blender like a Vitamix, cover and start blending on medium. Once combined, increase the speed and drizzle the olive oil into the opening at the top of the blender until emulsified and bisque-like. Note, if the soup is too thick, you can add a touch of water or broth to it before adding the olive oil. The olive oil must be the last step. 
  • Pour into bowls and top with either crunchy bacon pieces, fresh herbs, or hemp hearts and enjoy warm!

Lately we have been enjoying this soup for breakfast. It fills us up, keeps us warm and is a great way to start our day with a vitamin and mineral boost. Bon appetite!
